Wet Chai Preparation:

Using espresso machine steam wand:
Add 2-3 heaped teaspoons to a milk frothing jug. Add 250ml of cold milk/soy and heat milk to desired temperature and consistency. Additional honey can be added at this stage for the sweet-tooths! Allow to rest for a minute or two for maximum flavour infusion. Give one final stir with spoon before straining to serve. Finish with a sprinkle of cinnamon sugar.
Using a tea pot:
Add 2-3 heaped teaspoons per 250ml of freshly boiled water. Allow to steep for 2-3 minutes. Serve black or add a splash of condensed milk for a deliciously sweet brew. Alternatively, add hot milk instead of water if you prefer a milkier result. Finish with a sprinkle of cinnamon sugar.
Using a stove:
Add 2-3 heaped teaspoons to 250ml of milk/soy. Bring to slow simmer for a minute or two or until desired strength is reached. Strain and serve with honey to taste and finish with a sprinkle of cinnamon sugar.
